Like many people, every New Year I resolve to become the healthiest version of myself possible. Dark Chocolate Fudgy Pudding Pops
Prep Time: 15 minutes
- 6 pitted dates (soaked for at least 1/2 hour)
- 1 can coconut milk
- 1/2 an avocado
- 1/2 cup dark chocolate Dutch cocoa powder
- 1 serving Chocolate Vega Protein & Greens
- 1-2 Tbsp maple syrup
- 1 pinch cinnamon
- 1 pinch salt
- 1 cup dark chocolate chips
- 1/3 cup coconut oil
- Roughly chop dates and throw them and the rest of the ingredients into a high speed blender.
- Blend until very smooth (2-3 minutes).
- Pour into molds and freeze.
- In double boiler, melt dark chocolate chips and coconut oil.
- Remove pops from the molds and dip into melted chocolate. Lie on non-stick mat and refreeze for at least 10 minutes.
