There’s something about soup that is so comforting and if you make them homemade they can be the perfect meal. Depending on the soup you’re making, they can also be quite time consuming, but not if you have a Vitamix.

My sister got herself a Vitamix a few months ago and I’ve been hearing about how awesome it is, and seeing all the amazing things she’s been able to make in it through the pictures she sends me. Being a vegan, she’s been able to make some healthy and nutritious meals, especially smooth style soups such as tomato. Tomato soup doesn’t have to be the kind from the can that you remember from your childhood that goes perfectly with grilled cheese. With a Vitamix there are all kinds of tomato soups you can make, and yes they will all still go perfectly with a grilled cheese.

Vitamix has a line of blenders to fit whatever your budget and needs are. This Vitamix Professional 500 1.89L 1380-Watt Stand Blender is the perfect all around blender. It has a 2 peak horsepower motor and laser cut stainless steel blades that can chop,cream, blend, puree, grind and heat, making this Vitamix a great tomato soup maker. It evencomes with three preprogrammed settings, one of them being hot soups. I love that the lid also has a plug so you can add ingredients as you’re blending without having to stop the blender each time.

I get really happy when appliances come with recipe books. It’s a great starting point and gives you a look at what the machine can do. Once I’ve tried a few recipes I find I feel more comfortable playing around on variations and creating my own recipes.

This Vitamix blender is also super easy to clean. All you have to do is add a drop of dishsoap with some warm water into the container and turn the blender on high for a quick 30 seconds. When you’re done that, just give it a good rinse with clean water and you’re all clean for next use.

Tomato soup

I love tomato soup, especially if it’s homemade and this recipe from foodwithfamily.com looks amazing. I love the idea of the added veggies for the health benefits and some extra flavour.

Simple 6 ingredient 6 minute tomato soup

Ingredients:

½ of a small onion, peeled and trimmed of the ends
1 large celery stalk (leaves still attached, preferably)
1 medium to large size carrot, scrubbed and trimmed of the ends, broken in half
1 garlic clove, peeled
1 (28 ounce) can diced tomatoes in juice
1 (14.5) ounce can diced tomatoes with Italian Herbs (or an identically sized can of plain diced tomatoes with 1 teaspoon Italian seasonings + ½ teaspoon dried basil.)

 

Directions

Add the onion, celery stalk, carrot, garlic clove, and both cans of tomatoes with their liquid into the blender. Fix the lid carefully in place and blend on HIGH for 6 minutes, or until steam is coming from the top of the blender. If using milk, add it and blend on HIGH for 45 seconds or until hot all the way through.

If desired, drizzle heavy cream or creme fraiche in the soup as you serve.
