The Vitamix is like the MacGyver of the culinary world. It’s almost as if you can throw anything you can imagine into it and it will blend and puree the contents into a delectable treat. One treat in particular you can create with a Vitamix is homemade pancake syrup. I know what you’re thinking: syrup is sticky and thick so how can a blender deliver any kind of quality result? Well, it can. How? I’m not an engineer, so can’t even begin to describe the magical things a Vitamix can do, but I’d have to say that its tied to the fact that its high-speed blades run on horsepower, which is the same metric used to measure the power of car motors. Needless to say, its power is unprecedented in the blender world, which means it makes easy work out of creating tasty syrup. Here are some of my favourite recipes …

 

 

Cinnapple Syrup

You really can’t go wrong when you combine cinnamon and apples.

Ingredients

  • ¼ cup of water
  • 3 cups chopped apples
  • ½ cup granulated sugar
  • 2 tsps. lemon juice
  • 1 tsp. ground cinnamon

Directions

  • Place all ingredients into the Vitamix container in the order listed and secure lid.
  • Select Variable 1.
  • Turn machine on and slowly increase speed to Variable 10, then to High.
  • Blend for 5-6 minutes or until heavy steam escapes from the vented lid.

Strawberry Syrup

  • 2 cups fresh strawberries
  • 3 cups granulated sugar
  • I package Fruit Pectin

Directions

  • Place all ingredients into the Vitamix container in the order listed and secure lid.
  • Select Variable 1.
  • Use the tamper to press ingredients into the blades.
  • Blend for 6-7 minutes or until heavy steam escapes from the container.
  • Pour into container and refrigerate.

If you’re more of a strawberry or blueberry fan, just replace the raspberries and follow the same instructions. The result will be delicious, homemade syrup you can use on your pancakes, in yogurt, or on anything else your heart desires.

Raw Date Syrup

Ingredients

  • 8 or 9 medjool dates
  • 1 & ¼ cups water (plus more for soaking dates)
  • 1 & ½ tsps. lemon juice

Directions

  • Place the dates in a small bowl, cover with warm water and let sit for 30 minutes.
  • Once the dates have soaked, drain the water and place the dates, water, and lemon juice in the Vitamix container.
  • Blend for 45-60 seconds or until smooth.
  • Store in your refrigerator for up to two weeks.
