I like a small microwave for its compactness, convenience, and versatility. Plus, modern countertop microwaves can do so much more than popping popcorn, warming up leftovers, and heating frozen meals. Unlike over-the-range or built-in microwaves, countertop microwaves do not require any special installation and can easily be moved. So, it’s no surprise that over two-thirds of Canadians owning a microwave prefer countertop microwaves. I’ll share my favorite microwave recipe, “Veggie Rice Bowl,” in a second, but you should know we have two Insignia microwaves that you could win by entering this contest. Read on to find out how!

Best compact microwave for small spaces

In many of our kitchens, there’s not enough space to simultaneously make coffee, use the toaster, and chop vegetables. So having compact appliances can be a huge help. A compact countertop microwave is convenient for its size—it’s also lower priced than larger options.

Microwave-cooked, quick, and easy dinner recipe

You are hungry, your kids and the rest of the family is cranky, and it is dinner time. When I am in that situation, I love making this recipe. Veggie Rice Bowls are my go-to when I need to get dinner on the table quickly. If you have some canned beans on hand it only takes 10 minutes to make this dish in the microwave.

Let’s make micro-dinner!

Veggie Rice Bowl can be made with basic ingredients that are easily available in most of our homes:

Ingredients:

  • 2 cups rice, 2 tsp olive oil, 4 cups water
  • 2 chopped tomatoes, 1 can of black beans, 1 tsp salt, and ½ tsp pepper
  • 1 avocado (chopped or sliced)
  • a handful of chopped cilantro & scallions for the topping

Directions:

  1. Combine the rice, water, and olive oil in a glass bowl.
  2. Stir, cover, and microwave, for 6-8 minutes until the rice is fully cooked.
  3. Carefully remove the lid, then add chopped tomatoes, black beans, salt, and pepper.
  4. Mix well. Top with avocado, scallions, and cilantro.

  3. I am a time-limited person this can help me to adjust my time and still have homemade foods, cakes and all the same

  4. I would make a breakfast wrap. There are a few different ways to even go about it which is the best part of using a microwave. First off, I’d have to decide if I’m going basic or more fancy with my egg. I use an egg poacher and add an egg to each well then stab the yolk and add a teaspoon of water for a poached egg or stir the whole egg with a tablespoon of milk for a scrambled like egg with the option of adding ingredients for an omelette type egg. The options are endless! I’d then use my bacon crisper and microwave a few strips of bacon. If you don’t have a microwave bacon crisper, you can turn a bowl over onto a larger plate with a paper towel and drape the bacon over the bowl. Once my egg and bacon are ready, I add them to a tortilla with a bit of shredded cheese. Once more in the microwave to warm the tortilla and then top with whatever dressings or toppings I feel like that day. Approx 5min prep time, 5min cook time and I’m set for the day!

  8. I’d prepare halibut steaks in sherry-sour cream sauce. I find the microwave makes it easy to keep fish dishes moist and delicious.
